Chips that are addicting but good for you. 08/13/2010
Kale Chips. You've either heard of these, had them before, and are quite intrigued, or you're grossed out because you don't eat much kale, let alone know about it. Let me introduce you to or reacquaint you with this amazing leafy green. A highly nutritious vegetable with powerful antioxidant and anti-inflammatory properties, kale is also very high in beta carotene, vitamin K, vitamin C, and calcium. Because of its high vitamin K content, people taking anti-coagulants are encouraged to avoid this food since it increases the vitamin K concentration in the blood, which is what the drugs are often attempting to lower. Kale, as with Broccoli and other brassicas (or cabbage family), contains sulforaphane, a chemical believed to have potent anti-cancer properties. There are so many great ways to use kale. One of my favorite ways is in a salad with a great marinade. But recently, I've had hankerings for a yummy snack to go well with Mad Men watching. Kale Chips hit the spot. I'm gonna finally get a dehydrator soon, but for now, baking will do. What you'll need: 3 tablespoons olive oil 1 tablespoon light non-gmo miso 1 tablespoon maple syrup 1/2 lemon squeezed 3 tablespoons nutritional yeast (optional, but gives it a great cheesy flavor) Mix all ingredients in a bowl until smooth. Throw in 2 cups kale, removed from stem, rinsed, patted dry, and cut into bite sized pcs. Massage well with hands until kale is nicely coated in mixture. Lay down on a cookie sheet and place in oven at 200 degrees for 30 minutes, until crunchy. Turn off heat, and mix around. Let cool in oven for 10 minutes. Serve, enjoy and repeat, again and again. love kale & love Mad Men. I had not thought of combining the two but now I will!!
