What you'll need:
3-4 tablespoons Extra Virgin Olive Oil
2 Garlic cloves, minced
1-2 small shallots, minced
1.5 cups chopped Heirloom tomatoes
1/2 Red Pepper chopped (optional; gives off a sweetness that is lovely)
2 tablespoons Fresh Goat Cheese (Goat Milk= Lactose-free!)
1 tablespoon Sea Salt
Generous amounts of black pepper
(In the meantime, boil brown rice pasta. (I used Brown rice Fusilli; this pasta is wheat and gluten free, made entirely from organic brown rice! No fuss, no bloating, no sinking feeling afterward). Cook for 20 minutes or so. Then drain and RINSE: that'll get rid of the starch.)
Keep mixing the sauce, adding in salt and goat cheese, mixing until creamy smooth. Simmer...
Throw the pasta into the skillet of sauce, stirring till well mixed. (For meat lovers- this would be a great time to add in some meat of choice.) Sprinkle over some black pepper... Serve and enjoy!
