Here's an easy, delish, and detoxifying recipe, perfect for the cozy fall!
1 cup Lentils
2.5 cups Water
3 tablespoons Olive Oil
1 small Shallot
2 cloves Garlic
2 stalks Celery, chopped
Dashes of Cumin, Turmeric, and Sea Salt (Remember my post about the magical, anti-inflammatory spice called Turmeric?)
In a skillet, bring oil, garlic and shallot together for 3 min. Add in lentils and water, stir. Cook for 25 minutes, then add in celery, kale and spices. Add more water if needed to achieve a stew-like consistency. Enjoy!
