Super Bowl Snacking: A Game-changer. 02/05/2011
It's Superbowl Sunday--- are you gonna go crazy? My yoga teacher said to us the other night that it's the one day he allows himself to drink Coke, indulge in buffalo wings and a few cheesy slices... (!) While a lot of folks will be doing the same, if you won't be partaking in such extremes but would rather take a protein-loaded, tasty, rich, satisfying, and even nutritious side dish to a party, try this easy recipe. Susan's (Superbowl) White Bean Dip: 1 can Cannellini Beans, drained and rinsed 2 cloves Garlic 10 Basil leaves 1/4 cup Olive OIl 2 tablespoons Apple Cider Vinegar (or substitute juice of 1/2 a lemon) 1/2 teaspoon Sea Salt 1 teaspoon Oregano Dash of Cayenne In a food processor, puree all ingredients together until smooth, or pulse until chunky and well mixed. For extra creaminess, add in 1/2 an avocado to the mixture. Serve it amid a sea of assorted goods like carrots, cauliflower, broccoli, pita, and flax chips- or slather it on bread as a sandwich spread. Dip it up, and Happy Superbowl Sunday!
